Celosia argentea

This is a variety that nearly vanished! Originally from China, these beautiful flowers resemble clusters of wool. Chinese Wool flower, also known as Celosia, are edible and can be used in numerous ways to add decoration to your dishes. The flowers can also be dried upside down for about two weeks and then used as an everlasting flower arrangement.

The leaves are edible too and have a flavour like spinach and swiss chard
