Beta vulgaris
A celebrated heirloom variety first introduced in Boston, USA, by farmer Josiah Crosby. Crosby Egyptian beet debuted in the 1888 edition of Gregory's catalogue and was praised for its exceptional early maturity and superior market quality. As a very attractive-looking beet variety, it has been rediscovered by market gardeners and enjoyed all over the world. These beets have lovely, large, flattened roots that have a deep red interior. Crosby Egyptian is an outstanding storage beet and is earlier to mature than other storage varieties. The tops are brilliant to use as spinach and are said to be extremely nutritious.
Can be harvested young as "baby" beets or when matured.
