Anthriscus cerefolium

Curled Chervil is a delicate and aromatic herb prized for its feathery, bright green leaves that add a fresh, mild flavour to a variety of dishes. Known for its soft texture and subtle hints of parsley and anise, this variety offers a curled leaf form that lends a decorative touch to salads, soups, sauces, and egg dishes. It is a staple in French cooking, often used as one of the “fines herbes” alongside tarragon, chives, and parsley.

This cool-weather herb grows best in rich, moist, well-drained soil and prefers partial shade to avoid early bolting. Sow seeds shallowly in early spring or late autumn and keep the soil consistently moist. Germination takes between two and three weeks, and direct sowing is recommended due to its delicate taproot.

Once established, Curled Chervil benefits from regular harvesting of young leaves to encourage bushier growth and to prolong the harvest period. It self-seeds easily under favourable conditions, providing fresh leaves year after year. Its tender foliage also makes a lovely garnish, and the plant’s delicate white flowers attract beneficial insects to the garden.
