Anethum graveolens

Dill Bouquet is a heritage variety widely appreciated in South Africa for its generous yield and aromatic leaves. Originally selected for its large, umbrella-like seed heads and tall growth habit, this variety has become a favourite among home gardeners and market growers alike. Its ability to draw pollinators such as bees and butterflies adds further value to any kitchen garden.

The foliage of Dill Bouquet is soft and feathery with a sweet, slightly citrus-like aroma. It complements a wide range of dishes including potatoes, eggs, and seafood, and is especially famous for flavouring pickles and homemade sauces. The seeds and flowers are equally useful, adding a bolder flavour to breads, curries, and vinegars.

Dill seed is best sown directly into the garden, as it dislikes transplanting. Sow seed at a depth of about 3 mm, spacing plants 10 to 15 cm apart. Germination occurs within 7 to 21 days in soil temperatures between 13–24 °C. For a continuous supply, sow every few weeks throughout the growing season.

This variety thrives in full sun and well-drained soil, reaching up to 90 cm tall at maturity. Begin harvesting leaves from 45 days, flowers from 75 days, and seed heads around 85–110 days. Trim flower stems early to extend leaf production, or let them mature for an excellent seed harvest later in the season.
