Dixie beans, a charming bush lima bean variety, is known for its heat-loving resilience and eye-catching seed pattern. Introduced as a heritage staple in Southern U.S. gardens, this variety has remained a favourite for those seeking beauty and productivity in the bean patch. Its bushy plants stay compact, typically under 50 cm tall, making them ideal for small spaces or raised beds.

These beans shine in the kitchen as both fresh shellies and dry beans. Their speckled red and purple seeds are nutty and smooth when cooked, perfect for slow-simmered stews, mixed bean salads, or classic Southern-style butterbean dishes. As dried beans, they store exceptionally well and retain their visual appeal.

For germination, sow seeds 2–3 cm deep in well-draining soil once danger of frost has passed and soil temperatures are consistently above 18°C. Soaking seeds overnight can enhance germination but isn’t essential. Expect sprouts within 7–14 days under optimal conditions.

Dixie Beans prefer full sun and fertile soil. Provide regular watering during flowering and pod development, and consider mulching to retain soil moisture. Pods grow about 5 cm long and contain 3–4 seeds. Harvest for shelling when pods feel full but before they dry on the plant; for dry beans, allow pods to dry fully before picking.
