Matricaria recutita

German chamomile is a classic medicinal herb long treasured for its calming and digestive qualities. Native to southern and eastern Europe, it has been cultivated for centuries across the world, with historical use dating back to ancient Egypt and Greece. This annual herb grows upright to about 60 centimetres, producing fine, feathery foliage and cheerful white daisy-like flowers with golden centres.

The flowers carry a light, sweet fragrance reminiscent of apples and are best known as the traditional ingredient in chamomile tea. Their gentle sedative effect is commonly used to aid sleep and reduce anxiety, while also soothing digestion, easing colic, and relieving menstrual or respiratory discomfort. Dried chamomile flowers are also infused into oils, tinctures, and skincare preparations for their anti-inflammatory benefits.

Sow seeds in early spring, pressing them lightly onto the soil surface without covering. Chamomile needs light to germinate and prefers temperatures between 18 and 22°C. Germination occurs in 7 to 14 days, and seedlings can be transplanted once they are well established. In cooler climates, chamomile can be direct sown in early spring or late autumn.

Plant in full sun to light shade in well-drained soil. German chamomile begins flowering around 50 to 65 days after sowing, and multiple harvests are possible if flowers are picked regularly. Harvest flower heads at full bloom and dry them promptly in a warm, airy space for long-term storage.
