Levisticum officinale
Lovage, also affectionately known as Maggi Herb, is a robust and flavourful perennial that deserves pride of place in any South African herb garden. Originally hailing from Southern Europe, this stately plant can grow over two metres tall and offers a taste experience often compared to a bold blend of celery, parsley, and a hint of anise. Long treasured for its culinary and healing properties, it has earned its nickname from the familiar aroma that recalls the well-loved Maggi seasoning.
Every part of the plant is edible, from its glossy green leaves to its hollow stems, seeds and thick roots. The leaves are perfect for adding depth to soups, stews, and sauces, and pair beautifully with chicken and eggs. Its roots can be cooked like a vegetable or used in broth, and the seeds make a warming spice or tea. Traditionally, lovage has been used to support digestion, ease water retention, and calm menstrual discomfort, with modern research pointing to its antioxidant and anti-inflammatory compounds.
Sow lovage seeds in early spring, directly into fertile, moist soil or start them indoors in trays. Cover seeds lightly with 1 to 1.5 cm of soil and keep evenly moist until germination, which takes 10 to 20 days. Lovage prefers full sun to part shade and will thrive in a spot with rich, well-drained soil and good water retention.
Plants reach full height in their second year, forming a lush, upright clump with deeply divided leaves. Harvest the leaves regularly from spring to late summer, and allow a few umbels to mature in autumn for seed collection. With a generous root system and long life, lovage rewards the patient grower with years of harvests and flavour.
