Coriandrum sativum
Santo Slow Bolt is a superior slow-bolting variety prized for its extended leaf production and robust growth habit. Originating from selective breeding, this cultivar forms upright, lush clumps reaching 30 to 60 centimetres tall. Its finely divided, bright green leaves maintain fresh flavour longer in warm weather, making it perfect for continuous harvesting throughout the growing season.
The classic cilantro aroma and bright, citrusy flavour shine in salsa, Mexican, Caribbean, and Asian dishes. Santo also produces delicate white to pale pink umbels of edible flowers that attract beneficial pollinators to the garden. As the season progresses, the plant sets seeds known as coriander, which are harvested later for use in spice blends, stews, and pickling.
Sow seeds directly into well-drained soil in early spring or autumn, covering lightly to about 6 mm depth. Germination occurs in 10 to 15 days under optimal temperatures of 10 to 29°C. Santo cilantro prefers full sun or partial shade and benefits from consistent moisture to prevent stress and premature bolting. Leaves can be harvested from about 50 days after sowing, with coriander seeds maturing between 90 and 110 days.
