Pomodoro Scatalone is a treasured paste tomato from the Lazio region of Italy, especially near Lake Bolsena, where generations of farmers have cultivated it for its durability and culinary depth. The name “Scatalone” refers to its traditional ripening method: fruits are harvested firm and slightly under-ripe, then finished off the vine in cartons, preserving flavour while reducing spoilage. This heirloom has been grown in Italian family plots since the early 20th century and is valued as a regional classic.
The fruit is medium to large, plum-shaped, and weighs between 100 and 150 grams. Its flesh is dense and meaty, with thin skin and very few seeds, making it ideal for reducing into thick sauces or drying into richly flavoured slices. The flavour profile is well balanced between sweet and acidic, with a clean, concentrated tomato taste. It also serves well fresh, sliced into sandwiches or salads when fully ripened.
Begin seeds indoors six to eight weeks before the last frost. Sow seeds 5 millimetres deep in a warm, well-drained seedling mix and maintain a temperature of 22 to 28 degrees Celsius. Germination takes about 7 to 14 days. Once seedlings are well established, harden them off gradually before transplanting.
Choose a sunny position with fertile soil and space plants at least 60 centimetres apart. Scatalone grows as an indeterminate vine, requiring strong support for its tall, productive habit. Fruit matures in about 70 to 75 days after transplant and can be picked slightly pink to ripen off the plant, allowing for more controlled harvest and reducing field losses.

The fruit is larger than the standard San Marzano and boasts lots of pulp, very few seeds and excellent flavour typical of Italian paste tomatoes.
