Foeniculum vulgare var. azoricum
Fennel Wadenromen is a premium European bulbing fennel that combines delicate texture with refined flavour, perfect for both home gardens and kitchen creativity. Originally bred in northern Europe, this variety has become a favourite among South African growers for its crisp, white bulbs and aromatic, oil-rich foliage. With tidy, upright growth and fine feathery leaves, it brings both structure and usefulness to herb and vegetable beds.
The bulb is the showpiece of Wadenromen, forming a rounded, tender base with a mild anise flavour that intensifies as it matures. Harvest young for soft, melt-in-the-mouth slices ideal for roasting, salads, and grilling. The stalks and fronds add flavour to soups and stews, while the seeds can be dried and used in breads, teas, or spice mixes. Fennel is also prized for its digestive benefits and use in traditional herbal preparations.
Seeds should be sown directly into well-prepared soil about 1 cm deep. Thin seedlings to 20 cm apart in rows spaced 60 cm apart. For best results, sow during cooler months in early spring or late summer, avoiding the peak of midsummer heat. Germination usually occurs within 7 to 14 days at soil temperatures between 15–22 °C.
Fennel Wadenromen grows best in full sun with fertile, free-draining soil. Keep soil consistently moist to promote full bulb development. Bulbs are typically ready to harvest in 80 days, with full maturity and seed production occurring around 120 days. Avoid disturbing the roots when weeding, and mulch to retain moisture during warm spells.
