Thymus vulgaris
Winter thyme is a hardy culinary herb prized for its resilience and rich flavour. It belongs to the same species as English and French thyme but is especially suited to colder seasons. This woody perennial forms compact, aromatic mounds that begin to yield harvest worthy stems in as little as 30 days from sowing. Each plant typically grows to around 15 to 30 cm high, making it ideal for edging, containers, or garden beds where a robust thyme is needed.
The leaves offer a classic thyme flavour that is bold, earthy and slightly minty, with enhanced essential oils that give winter thyme a deeper taste than many summer varieties. Use it fresh or dried to flavour roasted meats, hearty soups, stews, vinegars and winter themed sauces. Its evergreen foliage and occasional blooms provide both culinary use and visual appeal throughout the cooler months.
Sow seeds shallowly, no more than 3 mm deep in moist, well drained soil. Light aids germination and seedlings typically appear within 14 to 21 days. Sow in beds, containers or trays in spring or autumn, and space plants about 20 to 25 cm apart to allow for full growth. Transplanting is optional depending on your starting method.
Winter thyme thrives in full sun and average, well drained soil. It is drought tolerant once established and prefers minimal feeding. Regular harvesting, especially before flowering, encourages fresh new growth and helps maintain a compact form. Prune lightly after flowering to prevent woodiness and to support productivity. Plants often remain productive through winter, making them a valuable year round addition to the herb garden.
