Lakota squash is a breathtaking heirloom variety with deep roots in Midwestern agricultural history. Although it takes its name from the Native American Lakota people, this cultivar was developed in Nebraska in the 1990s using seed lines preserved since the 1820s. It carries the heritage of Indigenous agriculture but is modern in performance, producing teardrop-shaped fruits with rich, reddish-orange skin and vivid green striping; eye-catching both in the field and as a decorative centrepiece.
Lakota squash is as tasty as it is beautiful. Its fine-grained orange flesh boasts a sweet, nutty flavour that lends itself exceptionally well to roasting, baking, and rich soups. It holds its shape and sweetness in the oven, making it ideal for stuffing or using as a hearty side dish. The thick skin also ensures excellent storage through the winter months, making this a favourite for long-term pantry use.
To start Lakota squash, sow seeds 2.5 cm deep into fertile, well-drained soil after all risk of frost has passed. Ideal soil temperatures range from 21–29°C. For optimal germination, start seeds indoors using bottom heat or sow directly into garden beds during late spring. Space plants 1.5 to 2.5 metres apart. Germination typically occurs within 7 to 10 days.
Lakota thrives in full sun and benefits from plenty of space to sprawl—vines can stretch up to 6 metres. Regular watering and a layer of mulch will help retain soil moisture and suppress weeds. Fruit is ready to harvest around 90–100 days from sowing, once the skin hardens and resists scratching. Cure squash in a warm, dry area for two weeks to enhance flavour and extend shelf life well into the cooler months.
