The Pink Fir fingerling is a cherished French heirloom dating back to the early 1800s and later popularised in the UK around the 1850s. With its uniquely knobbly, finger-like shape and dusky pink blush, this late-maturing variety has become a favourite among chefs and growers alike. In South Africa, its rare status and bold flavour make it a prized addition to heirloom collections.

Its waxy yellow flesh and earthy, nutty flavour hold up exceptionally well to boiling, roasting and steaming. The shape may be rustic, but the eating experience is refined. Pink Fir is particularly excellent in potato salads and is celebrated for its creamy texture that doesn’t break down in cooking.

Livingseeds supplies Pink Fir as plant-ready seed potatoes that do not require chitting. Plant them directly into loose, well-drained soil at a depth of 10 to 15 cm. Space the tubers 30 cm apart with 75 cm between rows. Expect a longer growing cycle of 120 to 140 days, rewarding your patience with flavour-rich, old-world tubers.

Though small in yield compared to modern varieties, Pink Fir shines in quality and storability. The firm flesh resists common scab and stores well in a cool, dry, dark space for up to three months. Due to its unusual shape, peeling is optional, and best done post-cooking if at all.
