Cichorium intybus
Rossa di Treviso is the quintessential Italian heirloom. Burgundy-red leaves with a radiant white stem, this radicchio variety has an earthy, mildly bitter flavour. It needs to be blanched as you would for endives.
Can be eaten raw, used to spice up a winter salad, stewed, or used in lasagna and risottos. Alternatively, tone down the flavour by grilling or baking and serve as a side to fish and meat dishes.
