Polish Paste is a cherished heirloom tomato from Poland, long favoured for its prolific yields and versatile culinary value. This variety produces large, pear-shaped fruit with deep red skin and firm, meaty flesh. Indeterminate in growth, Polish Paste continues to set fruit throughout the season and is renowned as one of the largest of the Roma-style tomatoes.
This variety is ideal for making sauces, pastes, and preserves, thanks to its low moisture content and rich, robust flavour. The dry, dense flesh is perfect for cooking down without the need for excessive boiling or straining. While designed for processing, its sweet-tart balance and low seed count make it a pleasant option for fresh slicing as well.
Sow seeds indoors from late winter, about 6 to 8 weeks before your last frost. Plant seeds 5 mm deep in a warm, well-draining seedling mix and maintain a consistent temperature of 22 to 25 °C. Use a germination heat pad if necessary to encourage even sprouting. Seedlings benefit from strong light and good airflow to prevent damping off.
Transplant outdoors in a full sun position once frost risk has passed. Provide fertile, well-drained soil and space plants at least 50 cm apart. Being indeterminate, Polish Paste requires strong support to carry its large fruit, which ripens around 80 to 90 days after transplanting. Pick fruit when fully red and slightly softened at the tip for the best flavour and texture.
