THIS is the beetroot you're looking for if you want to make your own sugar. Historically, the Northern Hemisphere derived over 90% of its sugar from sugar beets, and to this day, it still remains an important cash crop in many parts of Europe and North America.

Unlike sugar cane, making sugar from beets is a relatively simple single-step process.

The super-sweet roots are harvested and instead of being eaten, are crushed and used in the production of sugar. Soil conditions for successful culture include additional calcium and it must be rich in humus with the ability to retain water. Drought or water stress will lower the sugar content in the roots, which can be as high as 21%.
